Time to stuff my face with eggs, scrambled up to perfection! (Egg scramble delight!)
After 1 VERY successful round of Whole 30 a few months ago, 1 shaky round of Whole 30, and a whole lot of weeks afterward of pure junk food insanity, my body is craving health. I always joke with people that Whole 30 will change your life is 30 short days if you stick to the program and it’s true: I am forever changed. Even with my cruise-food binge (x2), in the back of my mind, I was yearning for healthy choices! Binge food is amazing, don’t get me wrong, but my body wants more now. It wants better. And the foundation of that is where I will always go back to.
My hubby and I just got home from a fun weekender cruise with our good friends and despite my birthday in 2 days, a conference I will be attending in a few weeks, and hectic schedule for the next few months, I NEED a round of whole 30 to center myself again and feel good. It’s 30 days of my life. Nothing in the grand scheme of things and I will have a whole slew more birthdays to celebrate with wine and beer. For this birthday, my 35th, I will be eating clean and healthy and no champagne toasts.
Now let’s talk busy mom life and making plans to be diligent about the menu. Mornings are tough on me. Especially preschool mornings. Billy is a night owl and wants to sleep in. Getting him out of bed is a chore I should be paid to accomplish. He is a 16 year old boy wrapped up into a 5 year old body. Aidan is a hit of miss, but doesn’t want to go to school. So getting him dressed, fed and ready is also much of a struggle. This does not leave time for my breakfast prep. Insert the Pampered Chef ceramic microwave dish! It’s perfect for the mom-on-the-go and you can have an amazing, compliant breakfast in 5 minutes or less. (Microwave bacon is not my favorite, but it’s bacon and is bacon every wrong? I think not!)
Looks fancy right? It’s all in the presentation. I watch cooking competitions! Seriously, how fun would #momlife cooking competition be? There would be kids in the background screaming, you only have 5 minutes and you have to make a solid, nutrition-rich meal, despite the distractions. NBC, ABC, Fox…I have ideas! (ha-ha!)
