Carne Asada Fries on Whole 30? Oxymoron?
Carne asada fries were for dinner last night and yes, I am still abiding by the Whole 30 bible. How this that possible? I asked the same thing when my friend Ashley said she made one of my most favorite dishes earlier that week. Apparently, it’s super easy and super TASTY sans sour cream and cheese. (Did I just lose ya because who in their right mind wants to eat carne asada fries WITHOUT sour cream and cheese?)
Let me just leave this right here and then we can talk!

So, technically potato is allowed on Whole 30. During my first 30 days I only ate sweet potato twice, but kept seeing so many meal posts of potato hash, country-style potatoes, and mashed potatoes. I was very hesitant to consume from this category of food because my main goal is weight-loss, as opposed to 100% hormone reset. With a cruise at the end of my second Whole 30 though and killer results from my first month, I am treating the second round a tad more liberally than my first. To each their own, right?
As long as you have come to terms with eating potatoes, in whichever variety your prefer, you too, can make carne asada fries! Here’s how:
Flap/skirt steak. Is there a difference between the two? Marinate in apple cider vinegar, Rancher Steak Rub, Garlic Galore, and compliant dijon mustard (I use Annie’s). Mix it all up in a gallon bag and let sit for 30-60 mins. Cut up your choice of potatoes into thin strips. Line a pan with foil and add the potato strips, olive oil and some salt and pepper. I also use more Rancher Steak Rub and Garlic Galore because I can and it’s amazing!

Bake the fries at 400 degrees until they look nice and cooked and/or crispy. (All a matter of preference.) I even added 10 minutes of broiler time for mine. And they came out looking amazing!

Grill the marinated meat and cut into stripes or bite-size when finished. Top the crispy fries with carne asada and garnish with guacamole, grilled Anaheim peppers and salsa.

Seriously, Whole 30 is about creativity with food and falling in love with healthy food choices. This dinner was amazing and not once have I felt “deprived” while eating amazing and wholesome foods. (Well, there was this one time when I was getting kiddos Cold Stone Ice Cream…)
